Homemade Vegan Bars Recipe



The ultimate sweet treat that you have to try! These no-bake vegan protein bars are filled with plant based proteins and fibers, and can be prepared in no time.


Ingredients:

  1. ⅓ cup plant-based protein powder

  2. ¾ cup tiger nut flour

  3. Pinch of salt

  4. ½ tablespoon ground flaxseed meal

  5. ½ tablespoon chia seeds

  6. ½ tablespoon cinnamon

  7. 1 cup unsweetened sunflower seed butter

  8. 1 teaspoon pure vanilla extract

  9. 3 tablespoons maple syrup

  10. ½ tablespoon coconut oil, melted

For the chocolate topping:

  1. 1 tablespoon unsweetened cocoa powder

  2. 4 tablespoons unsweetened flax milk (or other plant milk)

  3. ½ tablespoon maple syrup

  4. ½ tablespoon pure vanilla extract

  5. 1 tablespoon sunflower seed butter

  6. ½ tablespoon coconut oil

Instructions:

  1. Line an 8x8 baking pan with parchment paper.

  2. Whisk together the protein powder, nut flour, salt, chia seeds, flaxseed meal, and cinnamon, in a medium bowl.

  3. Add the sunflower seed butter, vanilla extract, maple syrup, and melted coconut oil to the bowl.

  4. Stir to form a dough-like batter.

  5. Press the “dough” into the baking pan.

For the chocolate topping:

  1. Whisk together the cocoa powder, plant milk, maple syrup, and vanilla extract.

  2. In a glass measuring cup or bowl, melt the sunflower seed butter and coconut oil and then stir it into the cocoa powder mixture.

  3. Pour the chocolate over the dough and spread it into an even layer.

  4. Place the baking pan in the freezer for about 15-20 minutes.

Keep them stored in an airtight container in your fridge for up to 1 week. You may also store them in the freezer and then microwave for about 15-20 seconds.
