Homemade Blueberry Muffin Recipe




Perfect for breakfast, or just a snack or dessert, try these sweet but light homemade blueberry muffins! Super easy to make and the best spring-time treat!


Ingredients:

- 1 ¾ cups of flour + an extra tablespoon

- 1 teaspoon of baking powder

- ½ teaspoon of baking soda

- ½ teaspoon of sea salt

- Cinnamon (as much as you’d like, but at least ½ a teaspoon!)

- ⅓ cup of oil

- ½ cup of local honey

- 2 eggs

- 1 cup of plain or vanilla greek yogurt

- Blueberries (as many as you’d like, but at least a cup!)


Instructions:

  1. Preheat the oven to 400 degrees fahrenheit and start by combining the dry ingredients (flour, baking soda, baking powder, cinnamon, and salt) in a large bowl. Put aside

  2. In a medium bowl, combine oil and honey by whisking together.

  3. Once completely combined (should be like the texture of applesauce), beat the eggs one at a time into the bowl. Add the vanilla and yogurt after the eggs have been incorporated.

  4. Pour wet ingredients (from medium bowl) into the large bowl with the dry ingredients and combine.

  5. After washing the blueberries, in a small bowl, dust them with a tablespoon of extra flour to prevent them from sinking to the bottom of the muffins. Make sure that the blueberries are coated in flour

  6. Gently fold the blueberries into the batter.

  7. Grease a muffin tin (or place baking cups in the muffin tin) and divide your batter evenly. Top with whatever you’d like.

  8. Bake for 15-20 minutes, let cool, and enjoy!
