Creamy Vegan Sun Dried Tomato Pasta
This recipe is absolutely delicious! Perfect to pair with wine or your beverage of choice!
1 small jar of sun dried tomatoes in oil
1 tablespoon of the sun dried tomato oil
⅓ cup of Tahini
1 tbsp lemon juice
2 tsp oregano
2 cups of pasta water (more if needed)
1 box pasta of choice
Sliced sun dried tomatoes
In a large pot, cook pasta al dente per instructions on the package.
Reserve the pasta water after draining.
In a blender add all sauce ingredients and blend until smooth, adjust with seasonings and pasta water as needed.
Combine sauce and cooked pasta
Serve and top with vegan parmesan and sliced sun dried tomato pieces
