Recipe Monday #16: Avocado Brownies


Wanna use up that mushy avocado that's been sitting on your counter? Want to eat brownies but also feel healthy? Well, look no further!

Ingredients Needed:

1 ripe avocado

2 eggs

½ cup honey

1 teaspoon vanilla extract

⅔ cup wheat flour

¼ cup cocoa powder

1 teaspoon baking powder

Method:

  1. Preheat oven to 350℉ (175℃)

  2. Blend the following together until smooth: avocado, eggs, honey, and vanilla extract

  3. In a bowl, add flour, cocoa powder and baking powder into the mixture

  4. Mix everything together until a batter forms

  5. Pour mix into a baking pan

  6. Bake for 20-30 minutes and allow to cool

  7. Enjoy!!

** Feel free to add toppings before baking! Try chopped up nuts, dried fruit, or different kinds of chocolate chips**
